FAQs What does it mean when the label says "No Sugar Added" and the Nutritional Facts label shows a sugar content? Virtually all fruit, nuts, seeds and grains contain various forms of sugar. In particular, fruit contains fructose as well as sucrose which is also referred to as table sugar. Fructose is a simple sugar which has less impact on insulin then does the complex sugar sucrose. By letting the consummer know that "No Sugar Added" they will understand that sucrose or a corn syrup is not added to the fruit in processing. A fruit juice infusion derived from natural fruit juice concentrate will add natural fruit sugars in order to counter excess tartness in certain natural fruit and berries, most noteably cranberries. The Nutritional Label reflects the total sugar contained in a serving size for the product. Is all dried fruit the same? No. Drying temperature will impact the enzymatic activity and nutritional content of the final product. In order to reduce cost, a producer might use a higher temperature to recuse the drying time. Further, preservatives are added by to extend shelf-life or to maintain coloration. In spite of the extended shelf-life nutritional values do deteriorate after extended time periods. Kariba Farms will not knowingly accept drying temperatures that may impact nutrition and with few execptions (fancy apricots, peaches, pears, & plums) preservatives are never used. Natural and organic offerings will always compliment those items containing preservatives. Kariba Farms does not use artificial colotrs or flavors which can be used to provide a lesser quality product. What is the difference between Organic and Natural? Organic products are preservative free and are grown, harvested, and stored along the guidelines enacted in law by the USDA. An approved Organic Certifier, like Oregon Tilth, must certify the grower and distributors of these products, to insure compliance with these guidelines. Soil for organically grown products must be set aside for a three year period and certified to be pesticide free. Natural products are also preservative free, but do not have to adhere to the USDA Organic guidelines. How do I know if the product I am buying is Organic, Natural, or has presevatives? The ingredient statement for each product will state if there are any preservatives. If a preservative is used, it is typically sulphur dioxide, used for color retention. The product name will also state that the product is Organic or Natural. Also, in the product ID, a letter appears: R = Organic, N=Natural, P= preservative. What is the typical shelf life of dried fruit? Dried fruit is shelf stable for well over a year if stored properly. This means that is sealed tightly in a cool dry environment. It does not require refrigeration, however it can be refrigerated to further increase shelf life. The key is to keep air and heat away from the product. Can dried fruit be rehydrated? Absolutely! It is great for baking, cooking, and snacking. If you take Kariba Farms Mango, for instance, and put the mango pieces in cold water for 60 minutes, you will be able to eat rehydrated Mango that looks and tastes like fresh. Why is dried fruit more expensive that fresh fruit by the pound? It actually is not more expensive. In dried fruit, most of the water is removed during the drying process. The weight ratio of fresh fruit to dried fruit, in many cases, is 8 to 1, meaning 1 lb of dried fruit is equal to 8 lbs of fresh.
